My kids have always struggled to eat eggs. An egg is such a nutrition powerhouse and an incredible source of protein. It’s also an excellent way to get all the amino acids into kids to start the day. The trick to good french toast is using very high quality bread that is free of additives and preservatives. Try to find a good quality sour dough and serve with lots of fresh fruit. Also investing in organic eggs is a great idea because we want out kids to be getting maximum nutrition from their eggs. An egg is only as good as the quality of the food the chicken is fed and the condition in which the chicken is raised. Happy, well fed chickens lead to great quality eggs.

Whisk together eggs, nut milk, vanilla, cinnamon and maple syrup
Heat a pan on medium heat and drizzle about a tablespoon of butter
Place the bread in the egg mixture and soak on both sides until well soaked
Cook the bread in the pan for about 2-3 minutes on each side until golden brown
Serve with fresh fruit - we love bananas, apples and fresh berries!
