Nourish Me Lemon & Coconut Bread

This bread will nourish and sustain you and is simple and filling.

 Small handful of Almonds, Sunflower Seeds & Raw Cashews
 2 tsp Chia Seeds
 Zest & Juice of one lemon
 1/2 Cup of organic desiccated coconut
 1/2 cup of organic coconut flour
 1 cup of organic natural plain yoghurt ( I use Paris Creek)
 3 organic eggs
 1 tsp or ground cardamon
 1 tsp organic cinnamon
 1/2 tsp organic vanilla extract
 1/4 cup organic maple syrup (use a little more if you like it sweeter)
 1 tsp aluminium free bicarb soda
 Pinch of Himalayan sea salt

Grind nuts to form a flour like consistency

Add coconut flour, desiccated coconut, lemon zest, cinnamon & cardamon and combine

Add eggs and combine

Add yoghurt & maple syrup

Add salt, vanilla and bicarb & lemon juice and combine well.

Put into lined bread tin and cook for 35 minutes at 180 degrees until golden on top.

This is delicious with toasted Roasted Almond Butter
