It's always a good  time for chocolate isn't it?

These gorgeous muffins are filled with the most beautiful ingredients. There are sweet without being too sweet and incredibly nourishing.  This recipe makes a brilliant cake, muffins or mini muffins.

We probably make this once a fortnight and we never seem to tire of it. My boys love making this one and if they seem a little tired I often add another couple of eggs to up the protein content.

I hope you enjoy it!

Ingredients

 300 g of organic wholemeal spelt flour
 2 ripe bananas
 30 g organic raw cacao (not cocoa powder!)
 130 g organic rapadura sugar
 8 medjool dates minus pits
 1 grated zucchini
 120 g macadamia or coconut oil
 2 organic eggs
 dash vanilla extract
 1 tsp bicarb
 1 tsp baking powder
 200 g coconut milk
 1/2 cup desiccated coconut (watch out for preservative 202!)
 1 tsp apple cider vinegar

Directions

Grate zucchini - set aside

Add Magic Sprinkles in with the dates

Blend dates and banana until it forms a paste

Add all other ingredients and blend

Cook at 180 degrees for around 30 - 45 mins until they look delish and come out clean when fork poaked!
