Nourish Me Choc Chip Muesli Bars

You will never buy shop bought Muesli Bars again after making your own!

 2 cups of organic oats
 4-6 medjool dates
 small handful of almonds, raw cashews & sunflower seeds
 40 grams of organic extra virgin coconut oil (butter would work too)
 40 grams of raw organic honey
 2 organic eggs
 1/2 cup organic sultanas (sulfite free)
 1/2 tsp of organic vanilla extract (not vanilla essence - that stuff is NASTY!)
 A few shakes of cinnamon
 8 organic apricots (preservative 220 free)** Optional
 Organic Cocoa Nibs for top

Grind nuts to make a powder

Add dates and dried fruit and pulse to combine

Add remaining ingredients and mix well - you want a consistency that looks like a muesli bar so it it looks too chunky pulse again but you don't want a paste!

Put in lined tin pushing down flat

Sprinke cocoa nibs on the top and push in

Roughly cut top with knife in wet mix (this makes it easier to cut properly when cool)

Cook for 20/30 minutes at 180 degrees celsius until they smell amazing -  check after 20 minutes and sometimes worth turning over if underside is not browning… it's also best to take out a little before you think they are ready so they don't get too hard (kind of like anzac biscuits) it's easy to overcook them.

Cut into bars as they cool and enjoy!

Store in glass airtight jar in fridge.
