My kids asked for cake for breakfast the other day.

How could I say No?  Cake for breakfast is a BRILLIANT idea. I agree.   They asked for a honey cake which I took as an awesome opportunity to talk to them about the importance of bees

So I love honey.. and I’m fussy about the honey we use for a couple of reasons. Firstly most honey is crap. Secondly,  the bees of the world are in great danger. Most honey that you buy from supermarkets is sourced from China – has little therapeutic activity and is not beneficial for your health after it’s been so highly processed and chemically treated.

Good quality honey has many medicinal properties and can be used from everything from wound healing to sore throats.  If you buy a pot of manuka honey you will see a number on it. The higher the number the higher the therapeutic activity (high active constituents). It might say anywhere between 5+ up to 50+   The higher the number the more expensive the honey will be.

The bees in the world are in great danger and without bees we don’t have food so teaching kids to respect bees is so important. Being aware also to not use chemicals in your garden that hurt bees and to plant bee friendly plants!  So many things we can do to care for our bees. 

Ingredients

 1 cup of almonds
 3/4 to 1 cup good quality honey (depending on our taste)
 1 large sweet potato
 1 cup wholemeal spelt flour
 4 organic eggs
 2 tsp organic vanilla extract
 1/2 cup organic oats
 2 tsp organic cinnamon (not cassia)
 1 tsp bicarb of soda
 1/4 cup organic butter, organic coconut oil or olive oil
 3 tbs magic sprinkles (optional)
 1/2 cup organic sultanas (sulphite free)

Directions

Preheat oven to 180 degrees c and grease/line shallow slice tray

Grate sweet potato (set aside)

In a food processor or thermomix grind almonds to make almond flour and mix with spelt flour

Add cinnamon, oats, magic sprinkles, bicarb and combine

In a small pot melt honey & butter/oil and combine with vanilla

Whisk eggs gently and when honey/vanilla melted add into egg mix then add to flour mix and combine

Add sweet potato and combine well

8

Hand mix through sultanas or sprinkle them on top

9

Bake for 30 – 40 minutes until inserted skewer comes out clean

10

Turn out to cool on wire rack
