Chocolate Chip Brownie Slice

Chocolate Chip Square – simple nourishing and a real food beautiful treat!

Nourishing and Delicious

 1 sweet potato - skins on (roughly 200 g)
 ½ cup unhulled organic tahini (find in the health food section of your supermarket!)
 3 tbsp Magic Sprinkles
 ½ cup organic coconut sugar
 3 organic eggs
  cup raw cacao powder (not cocoa powder - spelt similarly but v different things!)
 ¼ cup pure maple syrup (different from maple 'flavoured' syrup)
 2 tbsp coconut flour
 ½ tsp bicarb of soda
 ½ tsp baking soda
 1 tbsp vanilla bean powder or vanilla bean extract
 1 tbsp coconut oil
 1 pinch of sea salt
 Chocolate Chips (Use whatever ones you like here - I used raw cacao nibs and my boys found them a little bitter so next time I'll try real chocolate chips - just make sure they are free of additives) Or if you don't have chocolate chips this would work with sultanas too! (just make sure they are sulphite free!)

Preheat oven to 180 degrees - you want oven super hot for this recipe!

Throw the sweet potato in your thermomix and blitz until fine of grate with a grater.

Add tahini into you thermomix or food processor and mix until combined (if the tahini contains an oily top throw that in too! Oil/fat is good in this recipe!)

Add the remaining ingredients except coconut flour and chocolate chips and whizz to combine

Add coconut flour and quickly mix then stir through chocolate chips by hand saving some to sprinkle on top

Pour into a  shallow tin lined with baking paper (I prefer unbleached 'if you care' baking paper')

Pour mix into lined tin using spatula to spoon in and sprinkle chocolate chips and a little coconut sugar on top

Bake for 25 - 30 minutes until cooked in centre - Don't overbake or it will shrink and be dry.

Place on wire rack to cool
